SIX VEGETABLE STEW
Ingredients (for 4 people):
4 artichoke
Fresh fava beans
Green beans in season
Peas
Red cardoon
4 fresh white asparagus
1 onion
Butter
Flour
Preparation:
Wash the vegetables and boil separately. Set aside.
Prepare a roux sauce (butter, onion and flour) with some Jabugo ham shavings and add the broth from the boiled vegetables.
Lay the base of the dish with the roux and place the vegetables on top, very carefully to ensure an attractive presentation.

Olesa de Montserrat is a municipality rich in culture and tradition, located in the foothills of the mountain of Montserrat.
